Spicy Cajun BBQ Shrimp and Biscuits

Spicy Cajun BBQ Shrimp is a classic dish that folks have been making for years and years.  It’s so full of flavor, from the “trinity” (onions, peppers and celery) to the fresh herbs and creole spices.  Not to mention you cook it all in butter and serve it up about 10 minutes later…simple, spicy, goodness.

It’s one of those dishes that you can vary based on what you’ve got in the pantry or fridge.  Since I had lots of fresh herbs and always have the ingredients for the “trinity” on hand, this is the version I came up with for tonight’s dinner.

Tonight we spooned this deliciously decadent shrimp and sauce over some homemade biscuits that I had leftover from brunch on Sunday.  Of course you could use rice, grits or pasta as a base…even a slice of cornbread would be yummy.  The main point is to have something that will soak up all that spicy, buttery goodness.  So get out your cast iron skillet and make this simple, southern classic.

Spicy Cajun BBQ Shrimp and Biscuits

Ingredients
  

  • 1 stick butter unsalted
  • 2 tablespoons canola oil
  • 1 medium green bell pepper coarsely chopped
  • 1 medium yellow onion coarsely chopped
  • 3 stalks celery sliced
  • 1 tablespoon fresh rosemary leaves finely chopped
  • 1 tablespoon fresh thyme leaves finely chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon worcestershire sauce
  • 1 pound medium shrimp peeled, deviened
  • 1 tablespoon cajun spice Emerils Essence
  • 1 tablespoon cajun hot sauce
  • 1/2 lemon juiced
  • 1/2 cup green onions thinly sliced

Instructions
 

  • In cast iron skillet melt butter and oil over medium heat
  • Saute bell pepper, onion and celery for 5-10 minutes until onion is translucent
  • Using a slotted spoon, remove sauteed vegetables from pan.  Reserve.
  • To hot butter/oil mix, add rosemary, thyme, salt, pepper, worchestershire sauce until herbs release their fragrance, about 1 minute.
  • Toss shrimp with cajun spice.  Add to hot pan.  Saute one minute.
  • Return vegetables to pan.  Add hot sauce and lemon juice.  Stir and saute for 3 minutes.
  • Remove from heat.  Do NOT overcook the shrimp.  
  • Slice biscuits in half.  Spoon BBQ shrimp on top.  Sprinkle with scallions.  Pass additional hot sauce for more spice.

Notes

  • Increase the heat by adding additional hot sauce to pan and/or after you plate the shirmp.
  • You can also choose to serve the shrimp over rice, grits, cornbread or pasta.
  • Pair this BBQ Shrimp dish with your favorite coleslaw or green salad.
