Berry Cobbler with Cheddar Biscuits by Zoe Francois

When I’m not cooking or gardening, I’m enjoying all of the new shows on the Magnolia Network about cooking and gardening! One of my new favorites is the show, Zoe Bakes. Zoe Francois is a professional baker who is sharing all of her pro tips with average home bakers like myself. It’s a rare time when I don’t watch an episode and immediately look up the recipe on her website, then make my grocery list and head to the store. Once back home it’s my turn to try and replicate the beautiful baking that she inspires.

The weekend was coming, which is often the time when I do some experimental baking. It also allows me a “cheat day” to enjoy delicious desserts. So yesterday I tried my hand at making her Berry Cobbler with Cheddar Biscuits. The results garnered a lot of praise and second helpings from my husband and son. What intrigued me most was that she tops this cobbler with a buttermilk cheddar biscuit. I have always loved the mix of sweet and savory notes in desserts. The combination was amazing.

Fresh berries fill the dish.
Sliced strawberries and blueberries ready for the biscuit topping.
Biscuit dough prep
You should be able to see chunks of cold butter and shredded white cheddar before adding the liquid ingredients.
Cover the fruit with biscuit topping
Using a small ice cream scoop, drop golf ball size dollops of biscuit dough on top of fruit.
Bake on 325 for 1 hour and 15 minutes until top is golden brown and the fruit has been bubbling for about 20 minutes while in the oven.
