Lemon Yogurt Cake

Thanks to my wonderful friend, Rhonda, I’m finding all kinds of ways to use the fresh lemons she gifted me.  Lucky for her she lives in beautiful Tuscon, Arizona where she has an enormous lemon tree bursting with fruit.  Today I chose another Ina Garten recipe.  This time for Lemon Yogurt Cake.  The recipe is simple, requires minimal work and results in a lovely little loaf cake.  Perfect for slicing as an afternoon snack with hot tea or alongside your morning cup of coffee.

I modified her recipe in just a couple of ways.  First I used full fat greek yogurt.  It has a tanginess that I prefer over regular yogurt.  Secondly after removing the cake from the oven I poked tiny holes in the top using a wooden skewer.  This allowed the cooked lemon/sugar syrup to seep down into the cake, adding extra flavor and moistness.
