Cooking for Alan – Dinner #7 Frozen Mocha Mousse

Chocolate Mousse was one of those things I learned to make as a young bride.  I remember serving it in large wine glasses with a dollop of real whipped cream and chocolate shavings.  Each person had their own individual serving of this light, velvety, whipped chocolate mixture.  It’s one of those desserts you can make ahead, refrigerate and pull out to serve when the time is right.

Until I began my journey of replicating all of Ina Garten’s recipes from her “Cooking for Jeffrey” cookbook, I had never seen a mousse that you could serve frozen.  The fact that Frozen Mocha Mousse combines two of my favorite flavors, coffee and chocolate, it was an easy choice for this menu.  Here’s a reminder…THIS NEEDS TO FREEZE for several hours or overnight.  It’s the perfect make-ahead dessert for a dinner party.  One less thing you’ll need to make on the day of the meal.

Frozen Mocha Mousse with Fresh Whipped Cream

Like all mousse, the secret is taking care as you fold the chocolate mixture into the egg whites that you’ve beaten.  With this recipe you’ll have a second chance to practice folding as you also fold in whipped cream and shaved chocolate.  Gently folding keeps air in the mixture, which gives mousse it’s fluffy, silky texture.  Click here for the recipe and to see a video of how Ina Garten makes this luscious dessert.  Lastly, this dessert keeps in the freezer for a few weeks.  We are still enjoying it days later.
