Dark Chocolate Almond Lace Cookies
Sadly my little part of the world doesn’t have a Whole Foods store. This is sad because they sell an addictive cookie called, Chocolate Laceys. You can get dark chocolate with almond or milk chocolate with macadamia. On a recent work trip to St. Louis, I made my usual stop at a Whole Foods store where I stocked up on these delicious cookies and a few other items I can’t find at my local grocers.
It didn’t take long until we devoured them. So today I thought, “Why wait to go back to Whole Foods? Go online, do some recipe searches and make them at home.” I was glad I did. My cookies turned out tender, nutty, and chocolatey with a strong caramel flavor. My homemade version were a fraction of the cost of the store-bought variety.
Like with all “first time” recipes, I would make the following adaptations next time around. First, I would use light brown sugar instead of the dark I used. Second, I would bake them just a minute or two longer to increase their crispness. Third, I would cut the amount of cinnamon in half. Lastly, I would add some orange zest (as the recipe called for, but I didn’t have fresh oranges in the kitchen).
